- Scialatielli of the Upper Island
Scialatielli (a special kind of demi-fresh homemade pasta), garlic, extra virgin olive oil, hot chili, anchovies, green olives, grated lemon skin, salt and parsley.
Mince the garlic in a large pan brown it with oil, add the chilli.
Do not allow the oil to heat too much.
Carefully arrange the anchovies in a layer over the sauté of garlic. Cover and cook for no more than 2 minutes.
Uncover. Add the green olives, the chopped parsley and the grated lemon skin. Salt
Drain the scialatielli, put them in the pan, taking care to keep the anchovies as whole as possible.
